Portobello Sub Sammie



I have definitely been trying more things in the kitchen thanks to Pinterest. Recently I stumbled upon a pin from Nisrine's Dinners & Dreams blog. I couldn't find one of the ingredients, so I modified the recipe, and added a couple different items.


Whisk all ingredients in a bowl. Slice baby portobello mushrooms in half and toss in the mixture. Let marinate for 30 minutes.
Preheat oven to 350 degrees and bake for 5 minutes. Flip mushrooms. Bake for 5 more minutes.


I made mine pretty spicy by adding the crushed red pepper. Obviously if you aren't into the heat, reduce or remove that ingredient. :) I added honey [after I took this photo] because my favorite salad vinaigrette is composed of olive oil, balsamic vinegar, oregano and honey...so I knew that combination rocked.


You can eat the mushrooms as a side [as shown on Dinners & Dreams], or on a sandwich [toasted!], also shown on Nisrine's blog. I wanted to include some sliced avocados but was all out...the tomatoes were a tasty addition!


Have you tried something similar? What could I add to enhance this already delicious sandwich??
Now I'm hungry again. :)

  1. Mmmm!!! Looks so delish!!! I Love mushrooms sauteed with Laughing Cow creamy swiss cheese! But, to be honest this looks way yummier!

  4. This looks SO GOOD. I actually have a (regular-sized) portobello that is going bad pretty soon... this might be the perfect solution for it!
