Flourless Zucchini Brownies

I had a severe chocolate craving the other day. After perusing Pinterest for a while I found this recipe and decided to give it a go. My mom makes zucchini bread sometimes, and it's totally delicious, so I figured these brownies can't be so bad. :)


The process is relatively simple.
Preheat oven to 350.
I grated 1.5 cups of zucchini - and it was a pretty quick because zucchini is so soft.


Then just add all the other ingredients and mix it really well.
Pour into 9x9 baking pan.
Bake for 35-45 minutes.

I think I added too much zucchini by accident...which made my mixture a bit watery. And it made most of the chocolate chips sink to the bottom. Nevertheless, the brownies were yummy!

My sister even ate them out of the pan. :)

  1. Wow! These look amazing... I am going to have to try this one out since I don't do too well with starches... I get the bubble guts, I think I need to be a vegan or something, everything hurts my tummy!

    Haven't tried these yet - but I've read that if you toss your chocolate chips [or nuts or whatever mix you're baking with] with the flour it helps them adhere to the other ingredients better + be less likely to stick. It always helps with my muffins and banana bread anyway!

  4. I just came across your blog & this recipe! Mmmm These look so yummy! In the past, patting the zucchini down with a paper towel helps with the moisture. :)
